Fred has a unique background with over 26 years experience in the hospitality industry gained from early adolescence in family businesses, and from various roles held which have lead to management positions in the industry while studying for his double Commerce/Arts Degree. 
Fred continues to reach for new heights in professionalism by attending training events whenever and wherever he can to ensure he stays abreast of the latest national and international trends and developments in the hospitality industry.
Fred’s own Italian restaurant ventures have won him numerous awards and gained him a reputation for excellence and perfection in the industry. His natural passion for his profession is clearly evident in his warm, charismatic welcome and willingness to work with his guests to deliver a truly memorable dining experience for all types of occasions.

Jose Bernarde Head Chef

As the saying goes, “Behind every great Italian restaurant is a great chef” and indeed at La Piazza we are fortunate to have one of the best. Jose has over 40 years experience in the restaurant industry which started as a chef in Argentine in 1969 before he migrated to Australia in 1978. His experience has come from working for some of the better Italian restaurants in Melbourne’s Lygon Street and in Brisbane. His passion for his art is second to none and believes in only using the freshest locally produced ingredients for his culinary masterpieces.
He is renowned for the way he cooks his Pastas and seafood. The almost 700 grams of Flounder is delicately skinned and grilled to perfection, drizzled over fresh garlic oil and lemon juice, served with fresh Italian salad and hand cut chips. A true work of art and “A feast fit for a king” as our customers describe it.
Jose philosophy is to source the best possible ingredients and avoid overworking them to allow their natural flavors and textures to shine through, an approach that’s sure to delight the most discerning connoisseur of exquisite food.
